Sriracha Chicken

Who else LOVES Sriracha sauce? When I saw this recipe, I knew I had to try it. I don't love to cook with meat with bones in it so I modified it a little bit and made it with boneless skinless chicken thighs. We buy it in bulk at Costco (told you I was an old lady) and it was so good. I double the sauce (duh) and added more Sriracha sauce for extra spiciness.
Ingredients
2 lbs of chicken of your choice
2 tbsp butter, melted
1 tbsp olive oil
1 tsp garlic powder
salt and pepper to taste
(For the glaze)
5 tbsp of butter
1 tbsp flour
1/2 cup honey
1/2 cup Sriracha (I added more by tasting. I personally thought this was not enough)
2 tbsp soy sauce
juice of 1 lime
Directions
1. Preheat oven to 400F.
2. To make the glaze, melt butter in a small saucepan over medium heat. Whisk in flour until lightly browned, about 1 minute. Stir in honey, Sriracha, soy sauce, and lime juice. Bring to a boil then simmer until slightly thickened, about 1-2 minutes.
3. In a large bowl, combine chicken, butter, oil, garlic powder, salt, and pepper.
4. Place chicken onto a baking dish and bake for 25-30 minutes.
5. Brush the glaze on the chicken and broil for 1-2 minutes.
By the way, have y'all heard of Sriracha2go? They make a refillable bottle on a key chain so you can have Sriracha sauce wherever you go. Too bad they are back ordered for at least 45 days, because these would make great gifts for Christmas.
