Southern Style Pork Chops

I found this recipe on Pinterest and it is an easy dish to make on a weeknight.  It definitely is one of those recipes where you start to make it to realize that it is not so healthy.  I guess the Southern Style in the recipe title should have given it away.  But you know, you live once, so why not enjoy some butter and bacon once in a while?


*I doubled the recipe to make 4 chops*

INGREDIENTS
2 pork chops
1/2 diced onion
1-2 slices bacon
2 tbsp butter
2 tbsp cornstarch
3/4 cup water
salt & pepper

DIRECTIONS
-In a 12" skillet, cook bacon on medium high heat.  
-Remove bacon from pan but leave bacon drippings.
-Add 1 tbsp of butter and diced onion. When transparent, remove from skillet.
-Reduce heat to medium, lightly salt and pepper both sides of pork chops.
-Brown both sides for about 4 minutes each.
-Chop up bacon, and add both bacon and cooked onion to skillet.
-Add 3/4 cup water, 1 tbsp butter, cover and simmer until cooked (5-10 mins, but can simmer for up to 45 minutes).
-Just before serving, mix 2 tbsp cornstarch with 1/2 cup of water.
-Place pork chops on plates, add cornstarch mixture to the gravy in skillet.
-Bring to quick boil stirring frequently to form thick gravy.
-Serve with mashed potatoes and veggies.
-Enjoy!
