Bulgogi stew, or bulgogi jeongol (불고기 전골) as it is traditionally called, is a popular dish in Korea. It is basically a stew with lots of vegetables and bulgogi, marinated beef. It is one of the easiest dishes you can make since the ingredients can be easily found at your normal grocery store, maybe for the exception of the meat, if you want to use the traditional cut of beef. The meat for bulgogi is cut very very thin so it may be easier to pick this up at an Asian store as supposed to using what you can find at a local store or asking the butcher to cut. I made this with noodles but you could omit this and enjoy the dish with rice. Bulgogi alone is a very popular meal, and of my husband's favorite Korean dishes. The stew is best when eat right at the table or right after it is cooked.
Of course, I learned this recipe from my mom, who tells me to put a little bit of this and a little bit of that, and taste it to see if it tastes okay. Are all mothers like that out there? Ha. You can follow this easy recipe here, if you want to try!
Here is how mine turned out --
